Then, squeeze it out thoroughly using a piece of cheesecloth or a clean kitchen towel.&nbsp;<\/li>\n\n\n\n<li><strong>Add some starch<\/strong>: adding a tablespoon of potato starch makes the fritters firmer and extra crispy.&nbsp;<\/li>\n\n\n\n<li><strong>Frying temperature<\/strong>: drop the batter onto well-heated oil. If the heat is too low, the fritters will soak up the grease instead of frying.&nbsp;<\/li>\n\n\n\n<li><strong>Serve immediately<\/strong>: just like potato pancakes, even perfectly fried courgette fritters will eventually go soft. That\u2019s why they\u2019re best served straight off the pan.&nbsp;<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><span style=\"color:#c69f73\" class=\"has-inline-color\">How to keep courgette fritters from falling apart?<\/span><\/h2>\n\n\n\n<p>If your fritters are falling apart in the pan, it\u2019s usually due to incorrect proportions or being in too much of a hurry. &nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>The right consistency<\/strong>: don\u2019t skip the egg\u2014it\u2019s what binds the mixture and gives it structure. The batter should be thick. If the courgette still feels too watery after squeezing, go ahead and add an extra tablespoon of flour.&nbsp;<\/li>\n\n\n\n<li><strong>Patience<\/strong>: don\u2019t flip the fritters too early. The bottom needs to be noticeably golden-brown and set. Their skin is delicate, adds a nice pop of colour, and is packed with fiber.&nbsp;<\/li>\n\n\n\n<li><strong>Remove the seeds: <\/strong>if you\u2019re using a large courgette, make sure to scoop out the seedy center before grating.&nbsp;<\/li>\n\n\n\n<li><strong>Drain after frying: <\/strong>once cooked, place the fritters on a paper towel to soak up any excess oil.&nbsp;<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><span style=\"color:#c69f73\" class=\"has-inline-color\">How to serve courgette fritters?&nbsp;&nbsp;<\/span><\/h2>\n\n\n\n<p>My courgette fritter recipe is very basic, which also makes it incredibly versatile. My favorite toppings include Greek yogurt, herb sauce, garlic sauce, a slice of smoked salmon, or\u2014for the sweet version\u2014a sprinkle of sugar.
