Just make sure that your vegetables are finely chopped, so they\u2019ll bake quickly (about 20 minutes). Place them on a large baking tray, spreading them evenly in a single layer.&nbsp;<\/p>\n\n\n\n<p>I don\u2019t like to bake my eggs together with vegetables as it\u2019s difficult to control the consistency of egg yolks, therefore I prepare them separate using a frying pan. I like my egg yolks partially set, but not completely solid. I served our breakfast with only one fried egg per serving, but feel free to prepare as many as you want.&nbsp;<\/p>\n\n\n\n<p>This healthy breakfast is best when served fresh, so I don\u2019t recommend preparing it in advance. Save this recipe for a calm weekend morning, when you are not in a rush.&nbsp;<\/p>\n\n\n\n<p>If you\u2019re not a fan of marjoram, use your favourite herbs e.g. thyme or oregano.
