Unlike the fried rolls found in Chinese cuisine, Vietnamese spring rolls are not fried\u2014they are served cold or at room temperature and always accompanied by a dipping sauce.&nbsp;<\/p>\n\n\n\n<p>In Western countries, spring rolls are often served in fusion versions\u2014with salmon, avocado, mango, or chicken\u2014but the concept remains the same: fresh ingredients wrapped in thin rice paper and dipped in a sauce.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-text-color has-link-color wp-elements-1fb244c9ba97b7abdb7a31b9ce1f973b\" style=\"color:#c69f74\">How to prevent chicken spring rolls from turning gummy?\u00a0<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>The key is timing when soaking the rice paper. Don\u2019t soak it for too long. It might seem that longer soaking makes it softer, but it actually results in a gummy texture that\u2019s hard to bite.\u00a0<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Soak the rice paper for 3\u20135 seconds in lukewarm water. Transfer it to a board while it\u2019s still slightly stiff, the rice paper will soften to the right texture in a few seconds.\u00a0<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Ingredients inside should not be too wet; for example, remove the watery seeds from cucumber.
