To this day, it\u2019s one of my favourite salad options, which I prepare quite frequently. We call it a spring salad and thanks to the addition of fresh cucumber, radish and chives, it\u2019s light and very refreshing, perfect for spring-summer gatherings.&nbsp;<\/p>\n\n\n\n<p>Rice and cucumber salad is a great alternative to popular pasta salads, especially for people who avoid gluten in their diet. Therefore, if you are looking for a fool-proof gluten-free salad, make sure you try this recipe. I\u2019m pretty sure you won\u2019t regret it.&nbsp;<\/p>\n\n\n\n<p>This salad tastes best fresh, so I don\u2019t recommend preparing it well in advance. Store your salad in the fridge for 1-2 days. The next day, if vegetables produced a lot of water, you can pour it off and add one tablespoon of mayonnaise.
