This spring soup is one of those dishes you wait for all winter long \u2013 it\u2019s light, fresh, and has an incredible colour. It\u2019s also the name of the soup itself.<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Bo\u0107wina<\/strong> is the common name for Swiss chard (sometimes called silverbeet). It has distinct, crinkly leaves and colorful stalks\u2014red, orange, or yellow, depending on the variety.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading has-text-color\" style=\"color:#c69f74\">How to season your botwinka soup?<\/h2>\n\n\n\n<p>I season my soup with salt, lemon juice, black pepper, and a bit of sugar\u2014which you won't find in most recipes. Personally, I love that subtle sweetness, so a pinch of sugar is a must for me. I recommend seasoning the soup gradually, tasting it after each stir. It\u2019s the easiest way to get that perfect, balanced flavour without overpowering the delicate young vegetables.<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-text-color\" style=\"color:#c69f74\">How to keep that vibrant color?\u00a0<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>The right amount of beets:<\/strong> If your bunch of botwinka has tiny roots, I recommend adding 2\u20133 larger (older) beets. This gives the soup a deeper flavour and a beautiful, rich colour.<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Avoid hard boiling:<\/strong> Botwinka doesn't like to be boiled hard for too long. Intense boiling causes the pigments to oxidise, making the soup lose its colour.<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>The acidity trick:<\/strong> The pigment in beets (betanin) is extremely heat-sensitive, so it\u2019s worth \"fixing\" it with lemon juice or a splash of apple cider vinegar. It's best to add the acid at the very end when the vegetables are already soft. Just remember to do it gradually\u2014too much juice will dominate the delicate flavour.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading has-text-color has-link-color wp-elements-a4e8d0c9c161777108733215f20f27a0\" style=\"color:#c69f74\">Botwina zupa z m\u0142odych buraczk\u00f3w \u2013 wskaz\u00f3wki<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Proportions:<\/strong> I don\u2019t always use all the leaves from the bunch. I try to keep the ratio of ingredients (beets, stalks, leaves, potatoes, beans) more or less equal, but you can obviously adjust this to your liking.<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Timing is everything:<\/strong> Different parts of the beet cook at different speeds, so don't throw everything in at once. I start with the roots and stalks, add the potatoes a bit later, and save the leaves for the very end.
