Preheat the oven to 180℃.
Slice the chicken breasts in half crosswise, then halve the thicker part again to achieve two pieces of similar thickness. If any piece is significantly thicker, tenderise it gently with a meat mallet.
Finely chop the washed spinach and set it aside.
In a tall glass dish, thoroughly combine the cream cheese, cream, grated garlic clove, nutmeg, salt, and black pepper.
Place the prepared chicken in an ovenproof dish so that the pieces of meat do not overlap. Spread the spinach on top and pour the prepared sauce over it.
Bake the prepared dish for about 25-30 minutes or until the chicken is fully cooked. I suggest checking the meat after 25 minutes and adding a few more minutes if needed.
If the sauce separates during baking, simply give it a good stir. For added flavour, you have the option to sprinkle a small amount of grated Parmesan cheese over the finished dish (optional).
Serve the chicken in spinach alongside rice, grains, or your other favourite additions. Enjoy your meal!
