Quick oatmeal cookies with cranberries

These quick, simple oatmeal cookies with cranberries are super tasty and satisfying.

Ingredients
  

  • 1 cup old fashioned (rolled) oats (gluten-free)
  • ½ cup apple puree
  • 40 g dried cranberries
  • 50 g dried apricots
  • 50 g pecans
  • 1 egg
  • 2 tbsp honey
  • dark chocolate (optional)

Instructions
 

  • Preheat the oven to 180°C.
  • Finely chop the cranberries, apricots, and pecans.
  • In a medium bowl mix oats, apple puree, cranberries, apricots, pecans, egg, and honey.
  • Scoop the mixture with a spoon and shape 10 cookies on a baking tray lined with baking paper.
  • Bake your cookies for 15-20 min until slightly brown and crispy on the outside. Serve them with melted dark chocolate.
