Strawberry muffins with cream cheese

Delicate, moist wholemeal muffins filled with fresh strawberries and cream cheese.

Ingredients
  

  • 250 g wholemeal wheat flour
  • 200 ml milk
  • 80 ml oil
  • 160 g strawberries
  • 100 g sugar
  • 2 eggs
  • 1 tsp baking powder
  • 4 tbsp cream cheese
  • 1 tbsp honey

Instructions
 

  • Preheat the oven to 180°C.
  • In a small bowl, combine the cream cheese and honey, set aside.
  • Wash the strawberries, remove the stalks, and then cut them into smaller pieces.
  • In a bowl, combine the dry ingredients (flour, sugar and baking powder).
  • In a separate bowl, mix the wet ingredients (milk, oil, eggs) briefly using a kitchen whisk or a mixer. Add the dry ingredients and mix. Finally, fold in the chopped strawberries.
  • Line a muffin tin with muffin paper cups, then fill each of them with the prepared batter approximately halfway. Put about half a teaspoon of cream cheese on top and cover with a second layer of batter.
  • Bake your muffins for about 20-25 minutes or until dry toothpick. Enjoy!
