Oven roasted plum jam

Thick and sweet jam, with a beautiful colour.

Ingredients
  

  • 2,5 kg ripe plums
  • 1 tsp sugar (optional)

Instructions
 

  • Preheat the oven to 190°C.
  • Rinse the plums, remove the pits and cut them into quarters. Place the prepared fruits into a high baking tray.
  • Place the plums in the oven and bake for 30 minutes. After this time, remove the baking tray (be careful, there will be a lot of hot steam in the oven) and stir the plums. They should release a lot of juice at this stage. Taste them, to check if they are sweet enough. If needed, add a tablespoon of sugar and mix. Place them in the oven for another 30 minutes.
  • After this time, remove the baking tray from the oven, mix and check the consistency (after cooling down it’ll be slightly thicker). If the jam is still too thin, put it in the oven for an additional 15-20 minutes (be careful, you don’t want to burn it). Put the prepared jam into clean jars and pasteurise. Ready!
