Ingredients
400gcourgette
2eggs
4tbsp wheat flour
1tbsp potato starch / corn starch(optional)
2-3tbsp oil(for frying)
2pinch of salt
Instructions
Wash the courgettes and grate them. Place the grated courgette in a bowl, add a pinch of salt. Set them aside for a few minutes. Using a kitchen cloth or nut milk bag remove the excess of liquid, but don't squeeze too much.
In a bowl mix the courgette, eggs, wheat flour, potato flour and a pinch of salt. Fry your fritters using a small amount of oil (2-3 tbsp) over a medium heat. Serve them with your favourite toppings (e.g. sour cream or sugar).
