Quick courgette fritters | Easy recipe

Delicate, golden-green courgette (zucchini) fritters it’s a great idea for a quick dinner or snack.

Ingredients
  

  • 400 g courgette
  • 2 eggs
  • 4 tbsp wheat flour
  • 1 tbsp potato starch / corn starch (optional)
  • 2-3 tbsp oil (for frying)
  • 2 pinch of salt

Instructions
 

  • Wash the courgettes and grate them. Place the grated courgette in a bowl, add a pinch of salt. Set them aside for a few minutes. Using a kitchen cloth or nut milk bag remove the excess of liquid, but don't squeeze too much.
  • In a bowl mix the courgette, eggs, wheat flour, potato flour and a pinch of salt. Fry your fritters using a small amount of oil (2-3 tbsp) over a medium heat. Serve them with your favourite toppings (e.g. sour cream or sugar).
