2sweet potatoes (ok. 600g)
250gwhite beans(canned/cooked)
100gfeta cheese
4slices smoked bacon
¼small red onion
2tbsp olive oil
2tbsp chopped parsley
2tbsp chopped chives
½tsp dried sweet paprika
½tsp dried thyme
½tsp salt
Instructions
Preheat the oven to 180°C. Peel the sweet potatoes and chop them into small cubes. Place the cubes in an ovenproof dish and drizzle with olive oil. Add sweet pepper, thyme, and a pinch of salt, then mix well to coat. Bake for 25-30 minutes, or until the sweet potatoes are soft and golden brown.
While the sweet potatoes are baking, fry the bacon slices in a dry frying pan until crispy. Once done, set them aside on a paper towel to absorb any excess fat.
Prepare the remaining ingredients while the sweet potatoes bake: chop the bacon into smaller pieces, dice the red onion, crumble the feta cheese, and finely chop the parsley and chives. Also, drain the beans from their brine.
