Asparagus with burrata cheese

Asparagus with burrata cheese makes for a delicious combination, ideal as a spring appetiser, a light meatless meal, or dinner.

Ingredients
  

  • 1 bunch green asparagus
  • 1 burrata cheese
  • 2 tbsp almond flakes
  • 1 tbsp olive oil
  • 1 tsp butter
  • pinch of salt flakes
  • lemon zest

Instructions
 

  • Toast the almond flakes in a dry frying pan, stirring often (take care not to burn them), then set aside.
  • Thoroughly wash the lemon, grate the zest, and set aside.
  • Wash the asparagus thoroughly and trim or snap off the woody ends, then set aside.
  • Melt the butter in a large frying pan, add the prepared asparagus, and grill for a few minutes until they begin to soften.
  • Arrange the asparagus on two plates. Cut the burrata cheese in half and place on top of the asparagus. Drizzle a tablespoon of olive oil over everything, then sprinkle with lemon zest, toasted almond flakes, and salt flakes. Enjoy your meal!
