Easy cranberry crumble pie

This cranberry crumble pie is a quick and easy recipe that will satisfy the whole family.

Ingredients
  

Shortbread crust

  • 110 g butter (cold)
  • 75 g wheat flour
  • 75 g wholemeal wheat flour
  • 40 g sugar
  • 2 tbsp walnuts (chopped)

Cranberry layer

  • 2 cups fresh cranberries
  • ½ cup water
  • 2 tbsp honey

Crumble

  • 6 tbsp wheat flour
  • 3 tbsp oats (instant)
  • 3 tbsp sugar (for fruits + for sprinkling)
  • 3-4 tbsp walnuts (chopped)
  • 75 g butter (cold)

Additional

  • 1 apple (grated)

Instructions
 

  • Preheat the oven to 180°C.
  • Prepare the crust. In a bowl, add finely chopped butter and all other crust ingredients. Quickly mix all the ingredients with your hands until crumble dough is formed. Transfer your dough into a baking tray (32cm x 10cm) lined with parchment paper and press into the bottom to form an even layer. Place your crust into the oven and pre-bake for 10-12 minutes and set aside.
  • Prepare the cranberry sauce. Add the cranberry sauce ingredients to a small saucepan and cook (stirring occasionally) over low heat until reach jam-like consistency and set aside.
  • Prepare the crumble. In a bowl, add finely chopped butter and all other crust ingredients. Quickly mix all the ingredients with your hands until a crumble is formed.
  • To assemble your cake, spread the cranberry sauce on a pre-baked crust, following with grated apple. Evenly sprinkle the crumble mixture on top. Bake your pie for 30-35 minutes, or until golden brown. Let it cool completely before cutting and serving.
