Protein pancakes with Greek yoghurt

Protein pancakes with Greek yoghurt are a perfect example of how a sweet breakfast can be a nutritious meal packed with plenty of protein.

Ingredients
  

  • 300 g tbsp Greek yoghurt
  • 100 g spelt flour (type 550)
  • 4 eggs
  • 2-3 tbsp erythritol
  • 1 tsp baking powder
  • ½ tbsp rapeseed oil
  • 4 dark chocolate cubes (optional)

Instructions
 

  • Separate the whites from the yolks and whisk them until stiff with a pinch of salt.
  • In a separate bowl, using a whisk, mix: Greek yogurt, egg yolks, erythritol, spelt flour, and baking powder. If you're using dark chocolate, chop it into small pieces and add it to the batter.
  • Finally, fold the stiff egg whites into the batter, mixing gently until the mixture is smooth.
  • Smaż placki z obu stron na niewielkiej ilości oleju na średniej mocy palnika. Polecam użyć patelni z pokrywką - wtedy placuszki będą gotowe znacznie szybciej. Smacznego!
  • Jeśli użyjesz patelni ze specjalnymi wgłębieniami, wtedy placuszki będą takiej samej wielkości, idealnie okrągłe. :)
