If you have previously prepared frozen dumplings on hand, or even ready-made ones bought in a store, you will prepare the entire dish in no time and without much effort. Dumplings with vegetables are a simple dinner recipe that will please the whole family.
In my family house, we eat potato dumplings with creamy sauce and lots of mushrooms. This is my favourite way to eat potato dumplings and this probably won’t change. I ate potato dumplings with various toppings but nothing beats this mushroom sauce… However, this won’t stop me from trying new recipes and adding some new combinations to our home menu. Polish potato dumplings with vegetables - why try this recipe?
- Oven baked dumplings are a really simple and not very time-consuming recipe. Just boil the dumplings and chop the rest of the ingredients. The oven will do the rest for you.
- Baked dumplings are very tasty and also look great. That’s why you can prepare them for dinner or a meeting with friends.
- The recipe is very versatile. Customise it according to your preferences using your favourite seasonal vegetables or those you have on hand or in the garden. Dumplings, both homemade or bought in a store, will work perfectly here. You can also use ready-made gnocchi, they are probably more accessible than potato dumplings, and they are very similar.
- You can make this vegetarian by simply omitting sausage. Feel free to add more vegetables or cheese instead.

Polish potato dumplings (kopytka) with vegetables
Ingredients
- 500 g potato dumplings (kopytka/gnocchi)
- 150 g sausage (lean)
- 2 handful of cherry tomatoes
- 2 red onions
- ½ courgette
- 1 mini mozzarella (125 g)
- 1 tbsp oil
- 1 tsp oregano
- basil for garnish
Instructions
- Preheat the oven to 180°C.
- Boil the raw/frozen dumplings in salted water and drain. If the potato dumplings have already been cooked, move to the next step.
- Transfer the dumplings into a large casserole dish. Cut the red onion into large pieces, slice the sausage and put it into a dish with potato dumplings. Drizzle over with one tablespoon of oil, sprinkle with oregano and mix. Put in the oven and bake for 25 minutes.
- Meanwhile, cut the zucchini into thin slices, wash the cherry tomatoes and drain the mozzarella balls.
- After 25 minutes, remove the dish from the oven. Add the zucchini, cherry tomatoes and mozzarella evenly on top of the casserole. Bake for another 10-15 minutes, or until the mozzarella is melted. Garnish with a few basil leaves. Enjoy your meal!
