Nectarine cobbler is a summer dessert you absolutely must try. Sweet, ripe fruit topped with a soft, delicate biscuit-like dough. Don’t be fooled by its appearance – this dessert is not a fruit crumble, as the texture is somewhat different. Making a cobbler is incredibly simple and requires no special culinary skills. It's a great choice for a quick dessert for unexpected guests or a lazy afternoon on the balcony.

Cobbler is a type of dessert that originates from America but has gained popularity worldwide, likely due to its ease and short preparation time. Simply put, it’s seasonal summer fruit covered with a ‘biscuit’ dough and baked until golden.

Although they might look similar, a cobbler is not the same as a crumble, even though the preparation and ingredients are quite similar. A cobbler has a slightly crisp top, but the texture is more biscuit-like – soft and tender. Make this dessert and you’ll see what I mean. Just don’t expect a crumble!

You have full freedom here. Almost any type of summer fruit will work. Opt for peaches, nectarines, blueberries, raspberries, or plums. You can also use a mix of your favourite fruits.

Nectarine cobbler is a summer dessert you absolutely must try. Sweet, ripe fruit topped with a soft, delicate biscuit-like dough.

Ingredients
  

  • 6 nectarines
  • 1 tbsp potato starch / corn starch
  • 200 g spelt flour
  • 80 g cold butter
  • 60 g sugar
  • 100 ml buttermilk
  • 1 egg
  • 2 tbsp sugar (for fruits + for sprinkling) do owoców + do posypania
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Instructions
 

  • Preheat the oven to 180°C.
  • Wash the nectarines, remove the pits, and cut them into smaller pieces. Place the prepared nectarines in an ovenproof dish, sprinkle with cornstarch, and mix well.
  • In a bowl, mix together the spelt flour, sugar, cold butter (cut into pieces), baking powder, vanilla extract, and buttermilk to form a thick dough.
  • Spoon the prepared dough over the nectarines. There’s no need to cover the entire surface of the fruit completely. Sprinkle the tablespoon of sugar evenly over the top.
  • Place the dessert in the preheated oven and bake for about 35-40 minutes. The top of the cobbler should be crispy, while the inside remains soft. The dough must be fully cooked. Enjoy!
