If you are wondering how best to use the last strawberries from the garden, I have an idea for a delicious summer dessert. Creamy vanilla panna cotta served with fresh strawberry sauce. Our version of this sweet treat is less caloric than traditional panna cotta, but it’s just as tasty. Strawberries and vanilla are one of the best summer combinations, so it's worth trying out. The recipe is very simple and you’ll only need a few simple ingredients to make it. Let’s get started?
Panna cotta is one of the most popular summer desserts. No wonder, it’s light, creamy and delicious. Served straight from the fridge, it’s a great option for the summer heat. The consistency of the dessert is key, it has to be right. Not too firm, but it should keep its shape. Therefore it’s important to measure the ingredients carefully and let your dessert set in the fridge for long enough.
Our version of panna cotta is lighter and less caloric than the traditional one. Still, it tastes really good. To make this dessert I used low-fat cream (12% of fat). If you don’t care about extra calories feel free to use standard heavy cream instead. In this case, use only 2 tsp of gelatine. A small addition of buttermilk gives a subtle tangy flavour.
Panna cotta with strawberries - tips
This recipe is easy to prepare, but keep in mind a few important tips.
- Cover gelatine (10 g) with a small amount of water (about 2-3 tablespoons) and leave it for a few minutes to bloom. Gelatine will absorb the water.
- Mix prepared gelatine with hot milk (follow the recipe). At this stage, it’s important not to boil milk and gelatine mixture otherwise your panna cotta won’t set properly.
- Pour the prepared mixture into small serving dishes and set aside to cool. Then cover and put in the fridge for at least a few hours. This should prevent the separation of your dessert.
- I used wide glasses (capacity 180 ml). Feel free to use any small food containers or silicon moulds to prepare your panna cotta.

Panna cotta with strawberries | Light recipe
Ingredients
- 300 ml cream (12% of fat)
- 100 ml milk (whole milk)
- 100 ml buttermilk
- 4 tbsp sugar (for fruits + for sprinkling)
- 2 ½ tsp gelatine (10g)
- 1 vanilla pod
- 200 g strawberries
Instructions
- Measure the gelatine and cover it with a small amount of water (about 2-3 tablespoons). Leave it for a few minutes to bloom.
- Pour the milk into a saucepan, add two tablespoons of sugar. Cut the vanilla pod (lengthwise), using a knife remove the beans, add them to the milk (also empty vanilla pod). Bring to boil and remove from heat. Discard the vanilla pod.
- Add the gelatine to the hot milk (but not boiling). Stir until it’s thoroughly dissolved. Then add the cream and buttermilk.
- Pour the prepared dessert into four glasses. Set aside to cool. After this time, cover and refrigerate for at least 5 hours, preferably overnight.
- Wash the strawberries, remove the stalks. Mash the strawberries or blend them with two tablespoons of sugar.
- Serve the chilled panna cotta dessert with the strawberry sauce. Enjoy!
