Vermicelli salad | Vegan recipe
Ingredients
Salad
- ¼ small young white cabbage
- ¼ small red cabbage
- 2 carrots
- 1 cucumber
- 60 g vermicelli noodles
- 3 tbsp chopped chives
- 3 tbsp chopped coriander (or parsley)
- 2 tbsp chopped peanuts
- pinch of chilli flakes
- pinch of sesame seeds
Peanut sauce
- 2 tbsp peanut butter
- 2 tbsp water
- 4 tsp soy sauce
- 4 tsp lime juice (or lemon juice)
- 4 tsp brown sugar
Instructions
- Shred the white and red cabbage using a mandolin. Peel the carrot and cut it into thin sticks, along with the cucumber.
- Pour boiling water over the vermicelli noodles and cover them for 3-5 minutes. Once they're done, drain them and squeeze out any excess water.
- Place all the sauce ingredients in a small jar, close the lid and shake it until everything is well mixed. Alternatively, you can mix all the sauce ingredients in a bowl.
- In a large bowl, mix together the prepared vegetables, vermicelli noodles, chopped chives, coriander (or parsley), and toss well. Then, divide the salad onto plates, sprinkle with chilli flakes, sesame seeds, and chopped nuts. Finally, pour the peanut sauce over the salad, and enjoy your delicious meal!
