Pear salad with goat cheese and maple vinaigrette

This simple, quick pear salad is a perfect option for lunch as you can whip it up in less than 30 min. And you won’t believe how delicious this classic combination is! Just think about that fresh pear, creamy goat cheese, sour cranberries, salty bacon, crunchy pecans, and on top of that, sweet maple vinaigrette. I think you need to try this recipe.

This is the first year when I started making different salads with fruit components. And you know what? I was missing out! These salads are so delicious, much more than I was expecting. If you’ve never had this classic combination of pears, cheese, cranberries, and nuts before, it's definitely worth trying. 

How to customise this quick pear salad recipe? 

  • Greens – use any type of greens you have on hand e.g. rocket, kale, spinach, lamb's lettuce. 
  • Cheese – use creamy goat cheese, gorgonzola, feta, or any blue cheese.
  • Nuts – use your favourite nuts e.g. walnuts, pecans, or pine nuts.
  • Dried fruits – instead of cranberries you can use dried cherries or currants.

Ingredients
  

Salad

  • 2 pears
  • 2 handful of greens
  • 60 g cream goat cheese
  • 4 slices smoked bacon
  • 3 tbsp pecans
  • 2 tbsp dried cranberries (without added sugar)

Maple vinaigrette

  • 2 tbsp olive oil
  • 2 tbsp maple syrup
  • 1 tbsp white wine vinegar
  • 1 tbsp lemon juice
  • ½ garlic clove  (minced)
  • salt to taste
  • pinch of pepper

Instructions
 

  • To prepare your maple vinaigrette, combine all the ingredients in a jar, and shake it up until mixed. Alternatively, whisk all the ingredients in a small bowl.
  • Use a dry frying pan to roast the bacon over a medium heat until slightly brown and crispy. Set the bacon aside on a paper towel to remove the grease.
  • Using a dry frying pan, toast the pecans.
  • In two medium bowls place your greens, diced pears, goat cheese, cranberries, toasted pecans, and finely chopped crispy bacon. Pour half of the maple vinaigrette over the salads and taste, add more if needed.
