This light, colourful salad with orange tastes delicious and also looks beautiful on a plate. All the ingredients go together really well, creating a healthy, bursting with fresh flavours meal. Juicy, sweet orange, salty prosciutto, delicate mozzarella, crispy croutons, all finished with balsamic vinaigrette sauce. In my opinion, this is a very successful combination.
While waiting for the warm spring weather, we serve in our kitchen colourful, fresh salads with fruit accents. They’re great as a snack, lunch to work or light dinner. Uncomplicated, quick to prepare and most importantly very tasty!
If you plan to prepare your salad ahead of time, make sure to add the vinaigrette sauce just before serving. This way your salad won’t get soggy.
Salad with orange and mozzarella cheese - ingredients
- Greens - e.g. lamb's lettuce, arugula, spinach, kale, or any kind of lettuce. My favourite green ingredient is lamb's lettuce, as it’s delicate in taste. Choose your favourite one or whatever you have on hand.
- Orange - any kind will do the trick, just make sure that it’s juicy and ripe.
- Croutons - I usually prepare my croutons using a stale roll or bread. Simply, I dice them, drizzle with olive oil, sprinkle with a pinch of salt and granulated garlic. Then I bake them in the oven for a few minutes until crisp. Done!

Salad with orange and mozzarella cheese
Ingredients
Salad
- 4 handful of lamb's lettuce
- 2 handfuls of croutons
- 1 orange
- 150 g mozzarella cheese (small balls)
- 100 g prosciutto
- 4 dried figs
Vinaigrette
- 2 tbsp olive oil
- 1 tbsp water
- 1 tsp balsamic vinegar
- 1 tsp honey
- 1 tsp lemon juice
- salt and black pepper to taste
- pinch of oregano
Instructions
- To prepare the vinaigrette sauce, place all the ingredients in a jar, close and shake it up until mixed.
- Using a sharp knife, remove the orange skin along with the white membranes. Cut the peeled oranges into smaller pieces.
- Arrange the lamb's lettuce, oranges, drained mozzarella balls, pieces of prosciutto, sliced figs and croutons on plates.
- Pour the vinaigrette sauce over the salads. Enjoy your meal!
