Fried eggs with vegetables

If you’re wondering what to make for breakfast this weekend, I have a great recipe that you might be up for. These delicious, and super easy to prepare fried eggs with vegetables will please the whole family. Finely chopped potatoes, bell pepper and red onion, baked in the oven, served with fresh tomato and fried eggs. All seasoned with aromatic marjoram. Delicious!

Fried eggs with vegetables - tips

You can prepare this tasty breakfast in just half an hour. Just make sure that your vegetables are finely chopped, so they’ll bake quickly (about 20 minutes). Place them on a large baking tray, spreading them evenly in a single layer. 

I don’t like to bake my eggs together with vegetables as it’s difficult to control the consistency of egg yolks, therefore I prepare them separate using a frying pan. I like my egg yolks partially set, but not completely solid. I served our breakfast with only one fried egg per serving, but feel free to prepare as many as you want. 

This healthy breakfast is best when served fresh, so I don’t recommend preparing it in advance. Save this recipe for a calm weekend morning, when you are not in a rush. 

If you’re not a fan of marjoram, use your favourite herbs e.g. thyme or oregano. They’ll work just fine here.

Fried eggs with vegetables

These fried eggs with baked vegetables is a delicious and uncomplicated idea for a gluten-free breakfast for the whole family.
Prep Time 10 minutes
Baking Time 20 minutes

Ingredients
  

  • 2 potatoes (middle size)
  • 2 tomatoes
  • 1 red pepper
  • ½ red onion
  • 2 tbsp rapeseed oil
  • 1 tsp marjoram
  • salt and black pepper to taste
  • 2 eggs

Instructions
 

  • Preheat the oven to 180°C.
  • Dice the peeled potatoes, red pepper and onion. Place the chopped vegetables on a large baking tray. Add a tablespoon of rapeseed oil, marjoram, salt and black pepper. Mix thoroughly, bake for about 20 minutes or until the vegetables are tender. Turn them over once halfway through baking.
  • When the vegetables are almost done, start frying the fried eggs using a frying pan with a tbsp of rapeseed oil.
  • Mix the baked vegetables with the finely chopped tomatoes. Serve your vegetables with the fried eggs. Enjoy your meal!
