Delicate cod fillets served with creamy pea purée and baked potatoes are a healthier version of popular English 'fish and chips'. Soft, moist white fish prepared with the addition of butter and aromatic dill is a healthy, light dinner that the whole family will love. Delicious and uncomplicated!
I love cod in this healthier, baked version, I think it’s less complicated and time-consuming than the pan-fried one.
Cod is delicate in taste so I only season it with dill, salt and black pepper so as not to dominate the taste of fish.
How to prepare a perfect fish in the oven?
I used to think it’s almost impossible to make moist and delicious fish in the oven. Now I know it’s possible and very simple. 🙂 It all comes down to the baking time. If you adjust it to the thickness of your fish, it will certainly not come out dry. I bake thick fillets for about 18-24 minutes, thin fillets may only need about 15 minutes. Therefore, before the end of baking, I recommend checking fish and adding a few minutes if necessary.

Cod
- 4 cod fillets (skinless)
- 4 tbsp butter
- handful of dill
- salt to taste
- black pepper to taste
Baked potatoes
- 600 g potatoes
- 1 tbsp butter
- 1 tsp thyme
- salt to taste
Green pea purée
- 450 g green peas (frozen)
- 2 tbsp butter
- salt to taste
Instructions
- Preheat the oven to 180°C.
- Wash the potatoes thoroughly and cut them into smaller pieces. Place them on a baking sheet, add the melted butter, thyme, salt, and mix. Bake for about 30-35 minutes.
- Bring a pot of water (with a pinch of salt) to the boil. Add the peas and cook for about 6-8 minutes, rinse with cold water. Using a food processor blend the cooked peas, butter and salt into a creamy purée. You can save 1-2 tablespoons of whole peas for decoration.
- Wash and pat dry the cod fillets to remove excess water. Place into an ovenproof dish, season with salt, pepper and chopped dill on both sides. Put the pieces of butter on top. Bake, covered, for about 18-24 minutes. Thin fillets may need less time in the oven. Therefore before the end of baking, check your fish, and adjust the time if necessary.
