Who’s already reached for rhubarb in the kitchen this year? Hands up! At our place, it’s made an appearance as a delicious rhubarb and strawberry smoothie. You only need five simple ingredients to make it – and the result might surprise you! The tartness of rhubarb pairs perfectly with the sweetness of seasonal strawberries, creating a refreshing, healthy, and completely plant-based treat. We recommend it as a light mid-morning snack or an easy afternoon pick-me-up.

Rhubarb is one of those seasonal ingredients I just can’t imagine my kitchen without. It’s a true sign that summer is on the way – and we’re always looking forward to it! I love using rhubarb in healthier bakes and desserts. What about you – are you fans of its distinctive tart flavor? For me, it’s the taste of childhood – I still remember dipping the stalks in sugar and snacking on them straight from the garden.
Rhubarb smoothie - how to prepare?
It tastes best fresh, so I don’t recommend making it far in advance. However, if you’re short on time, you can wash and chop the rhubarb and strawberries ahead of time, then blending will take just a few minutes.
Add cold almond milk straight from the fridge – this way, your smoothie will be nicely chilled. You can easily swap almond milk for any other plant-based milk, like oat or soy.
If you use sweet, seasonal strawberries, one tablespoon of brown sugar might be enough. Give it a taste and add more if needed. I prefer my smoothies with a slight tang, so I added only a little sugar.
Remember, we use only the rhubarb stalks in this recipe – the leaves contain high levels of oxalic acid and are not safe to eat!

Rhubarb & strawberry smoothie
Kitchen utensils
- Blender
Ingredients
- 100 g rhubarb
- 200 g strawberries
- 200 ml almond milk
- 2 servings of protein powder (vegan)
- 1-2 tbsp cane sugar
Instructions
- Wash the rhubarb stalks thoroughly and cut them into small pieces. Transfer them to a small saucepan with a little water (just enough not to stick to the bottom). Simmer until tender for about 5 minutes. Set them aside for a few minutes.
- In the meantime, wash the strawberries, remove the stalks and cut them into smaller pieces.
- Put all the ingredients into a blender and blend to obtain the creamy smoothie. Enjoy!
tips
- If the smoothie is too thick, add more almond milk and adjust to your liking.
