Who has already used rhubarb in the kitchen this year? Hands up! We’ve prepared a delicious, fresh smoothie with seasonal rhubarb and strawberries. To make this healthy, vegan and dairy-free drink you’ll only need four easily accessible ingredients! Sour rhubarb goes really well with sweet, fresh strawberries. I recommend trying this recipe as a snack throughout the day.
Rhubarb is one of the seasonal delights that can’t be missed in our kitchen. This is a sign of the summer, that we are looking forward to! I’m pleased to use it for healthy cakes, tarts and desserts. What about you? Do you like its characteristic taste? It reminds me of my childhood when we ate fresh rhubarb stalks with sugar. 🙂
Rhubarb smoothie - how to prepare?
The smoothie tastes best fresh, so I don’t recommend making this recipe ahead of time. If you don't have much time, prepare your rhubarb and strawberries in advance, then blending will take you literally 5 minutes.
Use cold almond milk from the fridge. Feel free to replace almond milk with any other plant-based milk you like or have on hand.
If you use seasonal sweet strawberries, one tablespoon of cane sugar might be enough. Try it, add more sugar if needed. I like sour smoothies, so I prefer a smaller amount of sugar.
Remember to use only rhubarb stalks, as leaves are high in oxalic acid and shouldn't be consumed. Throw them away!
Do you prepare healthy smoothies with fresh ingredients on a regular basis? If so, I also recommend a vegan green smoothie with coconut water. Give it a go.
Rhubarb & strawberry smoothie
Equipment
- Blender
Ingredients
- 100 g rhubarb
- 200 g strawberries
- 200 ml almond milk
- 1-2 tbsp cane sugar
Instructions
- Wash the rhubarb stalks thoroughly and cut them into small pieces. Transfer them to a small saucepan with a little water (just enough not to stick to the bottom). Simmer until tender for about 5 minutes. Set them aside for a few minutes.
- In the meantime, wash the strawberries, remove the stalks and cut them into smaller pieces.
- Put all the ingredients into a blender and blend to obtain the creamy smoothie. Enjoy!
Notes
- If the smoothie is too thick, add more almond milk and adjust to your liking.
