Are you looking for a delicious salad that uses only a few easily accessible ingredients? Then you might want to check out this recipe. Smoked chicken breast, pasta, sweet corn, red onion, kidney beans, sweet grapes and toasted sunflower seeds are a combination of flavours we like a lot! This smoked chicken salad is great for a party, dinner or as a light lunch at work (it’s a great lunch box’ meal).
The recipe is very simple and can be whipped up in less than half an hour. You can prepare this smoked chicken and pasta salad ahead of time. Just make sure you mix all the ingredients thoroughly before serving. If you want to prepare the salad for a party, I recommend that you double or triple the ingredients so you can feed a crowd (the proportions in the recipe are for 4 small portions).
Smoked chicken salad - substitutes
- Smoked chicken breast - smoked chicken or turkey thigh will also work. As a last resort, you can use ham to make the salad (it will, however, slightly change the taste).
- Pasta - medium sized pasta works best (make sure you don’t overcook it). If you want to make a gluten-free salad, feel free to add cooked rice instead of pasta.
- Grapes and toasted sunflower seeds - sweet grapes and crunchy sunflower seeds work great with the other ingredients, so I don’t recommend substituting them with the other products.

Smoked chicken salad with grapes
Ingredients
- 200 g smoked chicken breast
- 150 g pasta
- 100 g sweetcorn (canned)
- 60 g red beans (canned)
- ½ red onion
- handful of red grapes
- 2 tbsp sunflower seeds
- 2 tbsp mayonaise
- 1 spring onion (green part)
- salt to taste
- black pepper to taste
Instructions
- Cook the pasta according to the instructions on the package (make sure you don't overcook it), rinse it with cold water, drain and add into a bowl.
- Cut the grapes into halves and remove the seeds, the chicken breast into cubes, the red onion into very small cubes. Put all the ingredients in the bowl with the chicken.
- Rinse the red beans with water and strain together with the corn. Add to the rest of the ingredients.
- Toast the sunflower seeds using a dry frying pan and add to the salad.
- Finally, add mayonnaise, chopped chives, season with salt and pepper. Mix all ingredients thoroughly. Enjoy!
