Choosing the right pastry for your asparagus tart
Undoubtedly, homemade puff pastry would be ideal, and I have great admiration for those who take on the challenge! However, I opted for a store-bought pastry due to time constraints. I recommend selecting one made with butter, though it can be somewhat tricky to find in shops. Interestingly enough, even within the same store, you might find two variants of puff pastry from the same brand - one with butter and the other with palm oil. Ideally, puff pastry should only contain flour, butter, water, and salt. That’s why it’s always a good idea to check the labels.

Puff pastry asparagus tart
Ingredients
- 1 sheet puff pastry
- 1 bunch of green asparagus
- 200 g cream cheese
- 100 g Cheddar cheese
- 4 tbsp almond flakes
- 2 tbsp chives
- handful of green peas
- 1 egg (to brush the edges)
Instructions
- Preheat the oven to 180°C.
- Wash the asparagus thoroughly and cut off the woody ends, then cut them into smaller pieces and set aside.
- If you use frozen peas, blanch them in hot water for a while or simply set aside to thaw. Then pour it onto a paper towel to dry it and set it aside.
- Place the puff pastry on a baking tray lined with baking paper. Use a fork to prick the dough, leaving a margin of about 2 cm around it (leave the edges free).
- Spread the cream cheese on the prepared dough, leaving the edges intact. Distribute the grated Cheddar cheese, previously prepared asparagus and green peas evenly. Finally, sprinkle with chopped chives and almond flakes.
- Brush the free edges of the tart with beaten egg. Bake the tart for about 30-35 minutes, or longer if the dough is still raw. After removing from the oven, set aside for a few minutes and then cut into smaller portions. Enjoy your meal!
