French toast bake

Sweet French toast, but with a twist, as it's baked in the oven. A delicious, lighter breakfast filled with seasonal fruits: apples and cranberries. Soft on the inside and nicely crispy on top. If you ever find yourself wondering what to do with stale baked goods lingering in your kitchen cupboards, then I recommend this recipe. It's a really neat way to make use of an older baked goods that might otherwise end up in the bin. This approach ensures nothing is wasted, and such a breakfast will surely satisfy your household. 

French toast bake - what kind of bread to choose? 

Choose whatever you have to hand. I never purchase baked goods specifically to prepare this recipe. I simply use what's currently in the cupboards. The texture might vary slightly depending on the type of baked goods you use, but it will be delicious regardless! I most often use sourdough bread or whole grain rolls with challah or a croissant.

Baked French toast will certainly turn out scrumptious with options like challah, brioche, croissant, or Parisian bread. But as I mentioned before, my priority is to use what I have at home. Therefore, the choice is yours to make. 

What to serve your baked toast with? 

I recommend a small amount of maple syrup or powdered sugar. Additionally, you can use your favourite fruits, not necessarily apples and cranberries as in the recipe. Although, I do recommend this combination, especially now that fresh cranberries are readily available. However, I would advise against using frozen fruits, as they contain a lot of water and can make the toasts too soggy.

French toast bake

French toasts, but in a slightly different casserole form, as they’re baked in the oven.

Ingredients
  

  • 300 g stale baked goods (e.g. 2 rolls and 2 croissants)
  • 150 ml milk
  • 2 eggs
  • 2 tbsp melted butter
  • 2 tbsp sugar (for fruits + for sprinkling)
  • 2 apples
  • 2 handful of fresh cranberries
  • 1 tsp cinnamon
  • 1 tsp vanilla extract (optional)
  • salt to taste

Instructions
 

  • Preheat the oven to 180°C.
  • Using a kitchen whisk, combine the eggs, milk, butter, tablespoon of sugar, cinnamon, salt, and vanilla extract. Set aside.
  • Slice the baked goods into medium-sized cubes, peel the apples and cut them into smaller pieces, wash the cranberries and leave them whole.
  • In a large bowl, mix the bakery, egg mixture, apples, and cranberries. Transfer everything to a baking dish (lightly greased with butter) and sprinkle the remaining tablespoon of sugar on top.
  • Bake for about 40-45 minutes or until the top is crispy. Enjoy!
