Cold, misty autumn mornings are an obvious sign of warming, comfort food season! That’s why today I encourage you to make a dessert that can be served warm - a creamy, thick rice pudding with raspberries. I always serve this rice as a sweet treat, but you can also prepare it for breakfast. Especially if you’re a sweet breakfast lover. This simple recipe is also a great option for those on a gluten-free diet.
Now when summer is gone I take full advantage of the autumn benefits. I love creamy soups with the addition of hot spices, vegetable stews, baked fruits with crumble, pumpkins in all forms and much more. I’ll certainly share some of my favourite dishes with you. Rice pudding - which rice to choose?
For this recipe, choose short or medium grain rice, such as arborio, risotto rice or sushi rice. Thanks to this, you’ll get a thick, creamy texture. With other types of rice, the cooking time and the final consistency may differ.
Rice pudding - tips
- Use a saucepan or pot with a thick bottom to prevent rice from sticking and burning.
- Stir up, the more often you do, the better. I know, it's a bit boring, but I can assure you it's worth it!
- After cooling down your pudding will thicken even more, so if you want to serve it cold, it can be a little thinner.
- You can reheat your pudding but add a little water or milk.
- You can serve ready dessert with your favourite toppings, such as cinnamon, cardamon, fruits or even jams.

Rice pudding with raspberries
Ingredients
- 300 g short-grain rice *
- 700 ml water
- 500 ml milk
- 3 tbsp sugar (for fruits + for sprinkling)
- 1 tbsp butter
- 1 tsp vanilla extract
- ¼ tsp salt
Instructions
- Rinse the rice and put it into a pot with a thick bottom. Pour in the water and simmer, stirring frequently, until the rice has completely absorbed the water.
- Pour in the milk and vanilla extract. Then add the sugar and simmer, stirring frequently, for about 30-35 minutes or until the desired consistency is obtained.
- When the rice is soft, add a tablespoon of butter and salt. Mix thoroughly. Serve with your favourite toppings. Enjoy!
