Today it's time for a bit of sweetness, do you agree with me? Great! I’ve got for you a simple recipe for delicious oatmeal bars. Made from a few ingredients, covered with a layer of chocolate, and sprinkled with a pinch of sea salt flakes. They taste really good, but unfortunately, they have one flaw - they disappear in the blink of an eye!
These bars are gluten-free, which makes this recipe a great option for everyone who is avoiding gluten.
It’s best to serve your bars chilled when chocolate is firm and crunchy. They’ll soften a little bit when kept in room temperature for long. Once ready store the bars in an airtight food container in the fridge for 4-5 days.
Oat bars - preparation
To prepare the bars, you need oatmeal (instant, gluten-free), cashew butter, ground almonds, dates, chocolate and sea salt flakes.
I used a mixture of milk and dark chocolate because not everyone in our family likes dark chocolate as much as I do. The addition of milk chocolate, unfortunately, means an increased amount of sugar and calories. Any type of chocolate will work here, therefore choose what is the most convenient.
If you don't have cashew butter at home, replace it with peanut butter, which is a cheaper and easily accessible option. However, keep in mind that this will slightly change the taste of your bars.
Sea salt flakes are optional and can be omitted. I recommend trying this version as salt is great for boosting the taste of chocolate, especially dark chocolate.

Ingredients
- ⅔ cup almond flour (80 g)
- ⅔ cup instant oats (70 g) (gluten-free)
- ⅓ cup dates (65 g)
- ⅓ cup cashew butter (100 g)
- 50 g dark chocolate (80% cacao)
- 50 g milk chocolate
Instructions
- Soak the dates in warm water for 10 minutes.
- In a food processor add the drained dates, almond flour and cashew butter, blend until the mixture is fully combined. Transfer the mixture into a bowl, add the oats and mix until incorporated.
- Press the prepared mixture into the bottom of the food container (14cm x 14cm) and set it aside.
- Melt the chocolate (dark and milk) using the microwave or double boiler method. Pour it over the previously prepared bottom. After a few minutes, sprinkle with the salt flakes.
- Place your bars into the fridge for at least 2 hours before serving. Enjoy!
