Historically, frittata was a simple, home-style dish often made with leftovers—vegetables, cheese, or cured meats—mixed with eggs and cooked. It was a way to avoid food waste while still creating a hearty and nutritious meal. 

Today, frittata is not only a staple of Italian cuisine but also a popular dish worldwide. Depending on the region and culinary traditions, you can find different variations of it.

  • The classic method starts by frying the frittata in a pan. Once the eggs begin to set, the pan is transferred to the oven to finish cooking. This technique ensures a lightly golden top and an evenly cooked centre.
  • An alternative method is to bake the frittata entirely in the oven, using a baking dish or a tart pan. This approach saves time and makes preparation even easier.

Ingredients
  

  • 4 eggs
  • 30 g brie cheese
  • 50 g mini mozzarella
  • handful of baby tomatoes
  • few dried tomatoes (in olive oil)
  • few basil leaves
  • pinch of oregano
  • salt to taste
  • black pepper to taste

Instructions
 

  • Preheat the oven to 180°C.
  • Wash the cherry tomatoes and cut them in half, then thoroughly drain the sun-dried tomatoes from the olive oil and chop them into smaller pieces. Drain the mozzarella cheese and cut the Brie into large cubes. Place the prepared ingredients into a medium-sized, heat-resistant dish and add a few fresh basil leaves.
  • Crack the eggs into a large bowl, add oregano, a pinch of salt, and black pepper. Mix everything thoroughly until you achieve a uniform mixture.
  • Pour the egg mixture over the previously prepared ingredients and bake for about 30-35 minutes, or until the eggs are set. Serve warm or cold. Enjoy your meal!
