Sweet potato and feta cheese salad – tips
- You can easily make this sweet potato salad vegetarian by simply leaving out the bacon. It does add a nice flavour, but it's not essential—the salad will still taste fantastic without it.
- Consider tossing in a handful of chopped walnuts for a crunch. They're not only tasty but also a good source of unsaturated fatty acids.
- To enhance the flavour, you can optionally drizzle a little high-quality olive oil over the salad before serving.

Sweet potato and feta cheese salad
Ingredients
Salad
- 2 sweet potatoes (ok. 600g)
- 250 g white beans (canned/cooked)
- 100 g feta cheese
- 4 slices smoked bacon
- ¼ small red onion
- 2 tbsp olive oil
- 2 tbsp chopped parsley
- 2 tbsp chopped chives
- ½ tsp dried sweet paprika
- ½ tsp dried thyme
- ½ tsp salt
Instructions
- Preheat the oven to 180°C. Peel the sweet potatoes and chop them into small cubes. Place the cubes in an ovenproof dish and drizzle with olive oil. Add sweet pepper, thyme, and a pinch of salt, then mix well to coat. Bake for 25-30 minutes, or until the sweet potatoes are soft and golden brown.
- While the sweet potatoes are baking, fry the bacon slices in a dry frying pan until crispy. Once done, set them aside on a paper towel to absorb any excess fat.
- Prepare the remaining ingredients while the sweet potatoes bake: chop the bacon into smaller pieces, dice the red onion, crumble the feta cheese, and finely chop the parsley and chives. Also, drain the beans from their brine.
- Combine the prepared ingredients with the baked sweet potatoes. Your salad is now ready to enjoy—bon appétit!
