Delicate, soft muffins with cherries are a great solution when you crave something sweet but there is nothing to eat. Sour cherries combined with a sweet, crunchy crumble taste really good. The recipe is extremely simple, and most importantly, you’ll prepare it in the blink of an eye. A little over half an hour and hot muffins will land on your table. Muffins with the crumble keep well for a long, and the next day they taste as delicious as right after baking. That's why I recommend them for a picnic or a summer trip. Let’s bake?
I really like to bake muffins, probably because they are so easy to make. Anyone who has tried to bake muffins at least once knows what I’m talking about. It all comes down to measuring the ingredients, mixing them, putting them into a muffins tray and baking! A little over half an hour and our sweet snack is ready. It couldn't be easier. It’s also a great recipe for those who don’t have a mixer, a kitchen whisk or a spoon will work here.
Muffins with cherries - tips
- Don’t skip the oat crumble, this sweet, crunchy addition works well with sour cherries. Without it, these simple muffins may not be sweet enough.
- If you don't have oat flour at home, that's not a problem. Use a coffee grinder or blender and grind your oats into flour.
- Do you have only frozen cherries? You can easily use them in this recipe. They don't even need to be defrosted. Just make sure that stones have been removed!

Cherry muffins with crumble topping
Equipment
- kitchen whisk / hand mixer
- muffin tin
- muffin paper cups
Ingredients
Muffins
- 125 g wholemeal wheat flour
- 125 g wheat flour
- 200 ml milk
- 100 g sugar
- 80 g butter (melted)
- 2 eggs
- ½ tsp baking powder
- ½ tsp baking soda
- 2 handful of cherries
Crumble
- 30 g oats
- 30 g oat flour
- 40 g butter (cold)
- 2 tbsp sugar (for fruits + for sprinkling)
Instructions
- Preheat the oven to 180°C.
- In a medium bowl, combine the crumble ingredients, set aside.
- Wash the cherries, cut them into halves and remove the stones.
- In a bowl combine the dry ingredients: wholemeal wheat flour, wheat flour, sugar, baking powder and soda.
- In a large bowl, using a kitchen whisk or hand mixer combine the melted butter, eggs and milk. Add the dry ingredients and mix until combined.
- Line a muffin tin with muffin paper cups, then fill each of them with the batter approx halfway. Add 2-3 cherry halves, cover with a second layer of batter and add an additional 2-3 cherry halves on top. Finally, sprinkle the crumble over.
- Bake your muffins for about 20-25 minutes or until dry toothpick. Enjoy!
