These quick oatmeal cookies are gluten-free and dairy-free. Such a great snack that can be whipped up in less than 30 minutes. Also, it’s super easy to make. All you need to do is toss all the ingredients together, form your cookies, and bake them.
The cookies are crunchy on the edges and soft, chewy on the inside. Packed with healthy fibre, dried fruits, and nuts. Adding a little bit of dark chocolate makes them even better!
Quick oatmeal cookies with cranberries - Ingredients
- Old fashioned oats – rolled oats (gluten free)
- Apple puree
- Dried cranberries – ideally without added sugar
- Dried apricots – ideally without sulphur dioxide
- Pecans - or other nuts
- Honey - or other liquid sweetener
- Egg - medium
- Dark chocolate (optional) – at least 70% cocoa

Quick oatmeal cookies with cranberries
Ingredients
- 1 cup old fashioned (rolled) oats (gluten-free)
- ½ cup apple puree
- 40 g dried cranberries
- 50 g dried apricots
- 50 g pecans
- 1 egg
- 2 tbsp honey
- dark chocolate (optional)
Instructions
- Preheat the oven to 180°C.
- Finely chop the cranberries, apricots, and pecans.
- In a medium bowl mix oats, apple puree, cranberries, apricots, pecans, egg, and honey.
- Scoop the mixture with a spoon and shape 10 cookies on a baking tray lined with baking paper.
- Bake your cookies for 15-20 min until slightly brown and crispy on the outside. Serve them with melted dark chocolate.
