Salad with rice and eggs - preparation

We have been making this quick rice salad in my family home for as long as I can remember. To this day, it’s one of my favourite salad options, which I prepare quite frequently. We call it a spring salad and thanks to the addition of fresh cucumber, radish and chives, it’s light and very refreshing, perfect for spring-summer gatherings. 

Rice and cucumber salad is a great alternative to popular pasta salads, especially for people who avoid gluten in their diet. Therefore, if you are looking for a fool-proof gluten-free salad, make sure you try this recipe. I’m pretty sure you won’t regret it. 

This salad tastes best fresh, so I don’t recommend preparing it well in advance. Store your salad in the fridge for 1-2 days. The next day, if vegetables produced a lot of water, you can pour it off and add one tablespoon of mayonnaise. This way your salad will tastes like on day one.

Salad with rice and eggs | Gluten-free recipe

Ingredients
  

  • 200 g ham
  • 200 g rice
  • 3-4 small cucumbers
  • 5 eggs (hard-boiled)
  • 1 bunch of radishes
  • 2 tbsp mayonaise
  • handful of chives
  • salt and black pepper to taste

Instructions
 

  • Cook the rice according to the instructions on the package. Rinse with cold water and set aside.
  • Cut the ham and cucumbers into small cubes.
  • Peel the hard-boiled eggs and cut them into small cubes.
  • Grate the radish using a grater.
  • In a large bowl, combine all previously prepared ingredients: boiled rice, ham, cucumbers, eggs, and grated radish.
  • Add the chopped chives and mayonnaise to the bowl, season with salt and pepper to taste. Mix thoroughly. Enjoy your meal!
