I have a great idea for a light summer dinner or snack – roasted corn with aromatic garlic butter and fresh parsley. It takes less than 30 minutes to prepare, and the result is definitely worth trying.
Why try roasted corn?
Have you had the chance to try fresh corn this season? If not, now is the best time. Late summer is the perfect time for fresh ears of corn, which can be found almost everywhere. It's worth taking advantage of this seasonal treat!
Combining sweet corn with garlic butter and parsley tastes exceptionally good. Roasted corn tastes even better when it's lightly toasted and slightly browned. If you prefer milder flavours, use less garlic in the butter.
Roasted corn is perfect both as a light dinner and as a side dish to a main course. You can prepare it either in the oven or on a charcoal grill, which adds a unique, slightly smoky flavour. Roasted corn with garlic butter
Ingredients
- 4 sweet corns on the cob
- 60 g butter
- 1 garlic clove
- 2 tbsp fresh parsley (or more)
- salt to taste
Instructions
- Preheat the oven to 180°C or prepare a charcoal grill.
- Remove the husks and silk from the ears of corn, thoroughly cleaning them.
- In a small bowl, mix the softened butter with the crushed garlic clove and chopped parsley.
- Spread the prepared garlic butter evenly over the ears of corn, then season with salt to taste.
- Place the ears of corn in an ovenproof dish or directly on the grill.
- If roasting in the oven, cook the corn for 25-30 minutes, turning the ears once halfway through the cooking time. If using a grill, grill the corn for about 20-25 minutes, turning regularly to ensure even browning.
- Remove the corn from the oven or grill and serve hot. Enjoy!
