Today I’ve got for you a chocolate brownie made with black beans. It’s sweet, moist, with a texture that hardly differs from the traditional brownie. Delicious! The recipe doesn’t use wheat flour, which makes it a great option for everyone on a gluten-free diet. So, if you wondering what to bake, I recommend trying this recipe.
I've baked many gluten-free brownies using a variety of ingredients, but this recipe is the best in my opinion. It tastes very similar to the traditional brownie. One of the main ingredients in this recipe is a black bean. But don’t worry, you can’t taste it after baking. This cake has an intensive chocolatey taste with a hint of bitterness from cocoa powder and dark chocolate. If you prefer, use only milk chocolate, but keep in mind that your cake will be sweeter.
The recipe is very simple and preparation won’t take you more than 25 minutes, then 30 minutes in the oven and your brownie will be ready! I used a baking tray 30 cm x 12 cm, but a more popular 20 cm x 20 cm tray will also work (brownie will be a bit lower). After 30 minutes of baking check the cake, if needed bake for an additional 5 minutes.

Chocolate black bean brownie (gluten-free)

Ingredients
- 240 g black beans (1 can)
- 100 g butter
- 100 g ground almonds
- 50 g potato flour
- 80 g dark chocolate
- 50 g milk chocolate
- 50 g coconut sugar
- 50 g dates
- 2 eggs
- 1-2 tbsp cacao powder
- 1 tsp vanilla extract
- ½ tsp baking powder (gluten-free)
- salt to taste
Instructions
- Preheat the oven to 180°C.
- Soak the dates for 15 minutes (use warm water, so they will soften quicker). In a food processor add the drained dates and black beans (rinsed and drained), blend until completely smooth.
- Melt the butter, dark chocolate and milk chocolate using the microwave or double boiler method.
- Using a hand mixer beat the eggs with sugar (about 3-4 minutes). Add the melted butter, chocolates and vanilla extract, stir until incorporated. Add all the other ingredients (including the dates and black beans paste) and stir until combined.
- Pour the batter into a baking tray lined with baking paper and bake for 30-35 min.
Notes
- Before use rinse and drain the black beans.
